A Letter from the Founder.

I was diagnosed with celiac disease along with 75 additional food sensitivities when I was a freshman in high school. Celiac disease requires a strict gluten-free diet for the rest of your life. So in a moment, I no longer was able to eat alongside my teammates before our games, nor could I enjoy birthday cake at a friend’s party. Something happened in that doctor’s office, though. I felt my life was given direction and meaning within my diagnosis. I felt called to open up my own place that people with celiac would feel comfortable at, sitting at the same table with people who don’t. That direction then got lost as I went through high school and college, and in some ways I went the opposite way from that call.

Then, in my first week working as a barista, my boss asked me this question:

“If you were to design your own coffee shop, what would it look like?”

A passion for hospitality, connection, and serving the under-represented fueled the foundation of what is now TRUE. coffee + pizza. I realized that the coffee shop is our society’s most common gathering place. So why should a common communal food [pizza] NOT be paired with coffee?

Everything that TRUE. creates and serves is and forever will be gluten-free so we can be that space that people feel welcome and able to gather together, regardless of dietary requirement. But we are not just for the people who need to eat gluten-free, dairy-free, etc. We serve good food. It just happens to be gluten-free.
