HELP US open A STOREFRONT!
Hello, world!
My name is Andrew Winely, and I am opening a restaurant in Indianapolis.
A lifelong diagnosis of celiac disease requires me to be constantly vigilant about what I put in my body. Every meal, every snack, has the power to separate me from others.
But it doesn't have to.
Coffee and pizza are powerful cultural staples for building community. They allow us to give. They allow us to share.
True. coffee + pizza is focused on creating food that is gluten-free, organic, and (whenever possible) local. It is the culmination of years of training, planning, praying, and dreaming. But I need help getting it off the ground.
In order to get the (dough) ball rolling and open a permanent location, I want to participate in local farmers markets. This goal serves two purposes. First, it will allow us to start generating income as we prepare a permanent storefront. Second, it will give us an opportunity to build a relationship with our community from the beginning which, to me, is essential to True.’s identity and success. And this is more than a short-term placeholder, too. True. will remain a consistent presence at community markets long after our storefront is open.
In order to accomplish this first big step, I must have access to a commercial kitchen. I am also prioritizing accessibility, and taking every precaution to eliminate cross-contact, so I cannot use a shared, commissary kitchen.
I need my own space.
To obtain space for a commercial kitchen and (eventually) a restaurant, I need funding for...
1 month’s rent + security deposit up front (~$8,000)
display funding for 6 months of rent (~$24,000)
renovating the kitchen ($unknown)
liability insurance (~$250)

If we happen to exceed our goal, the additional funding will go towards the equipment needed to participate on-location in local farmer’s markets, and then outfitting the restaurant itself!
